Any of Ennio Morricone's works with Sergio Leone. Then Goldsmith's score for "Patton" is up there, and most of John Williams' are great too. Hans Zimmer's instrumental score for "The Lion King" is awesome.

Was about to start a thread like this...but found this one.
I agree with the Morricone/Leone one, he does some great music.
I totally LOVE The Incredibes soundtrack. It's like an old Bond score, back when they were just cool with their mixture of jazz and rock.
Right now, I'm really digging The Life Aquatic (which movie I loved despite what other people think), which has some great stuff from Devo and David Bowie and Mark Mothersbaugh and the guy who sang the Bowie songs in Portugese.
I do like the Quentin Tarantino soundtracks. Pulp Fiction has got to be the best because of the awesome surf music, followed by Kill Bill Volume 2 with it's Spaghetti-Western sound. Then Volume 1 and Reservoir Dogs, which had some filler stuff on it (not counting the dialogue, but that Steppenwolf cover was horrible and Harvest Moon gts on my nerves). Jackie Brown is a good one, a cool jamming one.
The Collateral soundtrack kicks ass, especially from the song by Audioslave.

I just got the soundtrack for 28 Days Later - and it's good, nicely combining calm moments (Ave Maria!) with the nervous ones. But I'd have to listen to it several more times to start saying it's actually brilliant.
Anyone has or just listened to it?

Forgetting about the master of soundtrack compilations: MARTIN SCORSESE.
I FINALLY got the GoodFellas soundtrack today, wow, it's great. And Casino has a brilliant one too. Just this culmination of rock songs that you can tell have been picked and chosen for hours and hours and hours and hours and hours.
Even his classical oriented soundtracks, like Raging Bull and Taxi Driver (which was actually score by the brilliant Bernard Hermann) are exceptional.
Frankly, I believe Tarantino's and Rodriguez's soundtracks want to be Scorsese soundtracks. Honestly.
